- 2 cups bowtie pasta
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 cups broccoli florets
- 4 tablespoons cowboy butter
- 1 lemon, juiced and zested
- 2 cloves garlic, minced
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a mixing bowl, combine softened butter, minced garlic, parsley, chives, smoked paprika, lemon juice, salt, and pepper. Mix until well blended, and set aside.
- Bring a large pot of salted water to a boil. Add the bowtie pasta and cook according to package instructions. In the last 3 minutes of cooking, add the broccoli florets. Drain and set aside.
- In a large skillet over medium heat, add half of the cowboy butter. Once melted, add the chicken pieces. Season with salt and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes.
- Add the minced garlic to the skillet with the chicken and sauté for an additional minute until fragrant.
- Add the cooked pasta and broccoli to the skillet with the chicken. Pour in the remaining cowboy butter and lemon juice. Toss everything together until well coated and heated through.
- Taste and adjust seasoning with more salt, pepper, or lemon juice if needed.
- Transfer the dish to a serving platter. Garnish with lemon zest and chopped parsley for a fresh touch.
