Ingredients

  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 2 cups cooked, shredded chicken

  • 1 teaspoon dried parsley
  • 1 bay leaf
  • 3 cups egg noodles
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are tender.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the chicken broth, shredded chicken, thyme, parsley, and bay leaf. Stir to combine.
  5. Increase the heat and bring the mixture to a boil. Once boiling, reduce the heat to a simmer.
  6. Stir in the egg noodles and let the soup simmer for about 10-15 minutes until the noodles are cooked through.
