Description

Cinnamon Apple Baked Oatmeal is a warm and wholesome breakfast. It’s perfect for fall and winter, made with hearty oats, sweet apples, and crunchy pecans.


Ingredients

  • 3 cups old fashioned oats
  • 2 teaspoons cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 cup unsweetened applesauce
  • 2 large eggs
  • 1/2 cup maple syrup (OR brown sugar)
  • 2 teaspoons pure vanilla extract
  • 2 cups chopped apple
  • 1/2 cup chopped pecans

Instructions

  1. In a large mixing bowl, combine the oats, cinnamon, baking powder, and salt. Stir the dry ingredients well. Add the milk, applesauce, eggs, maple syrup, and vanilla extract. Stir thoroughly and fold in the chopped apples and pecans.
  2. Lightly grease a 9×13 inch baking dish. Pour the oat mixture into the dish and spread it out evenly.
  3. Cover the dish with plastic wrap and refrigerate overnight.
  4. The next morning, preheat your oven to 350°F (175°C). Bake for 35 to 40 minutes until set and golden brown. Let it cool for 5 to 10 minutes before slicing.
