These Christmas Cheesecake Bars are a creamy, festive holiday dessert featuring a buttery graham cracker crust, rich cheesecake filling, and cheerful red and green sprinkles.

- 1½ cups graham cracker crumbs (about 10 full sheets)
- ¼ cup granulated sugar
- ½ cup unsalted butter, melted
- 2 (8 oz) blocks cream cheese, softened
- ½ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ¼ cup sour cream
- 2 tablespoons all-purpose flour
- ½ cup red and green sprinkles (plus more for topping)
Instructions
- Preheat oven to 325°F (163°C). Line an 8×8 or 9×9-inch pan with parchment paper, leaving overhang.
- Mix graham cracker crumbs, sugar, and melted butter until combined. Press firmly into the pan. Bake 8–10 minutes and let cool slightly.
- Beat cream cheese until smooth. Add sugar and mix again. Beat in eggs one at a time, then add vanilla, sour cream, and flour. Mix just until smooth.
- Gently fold in ½ cup red and green sprinkles.
- Pour filling over cooled crust and smooth the top. Add more sprinkles. Bake 35–40 minutes until center is set but slightly jiggly.
- Cool 1 hour at room temperature, then refrigerate at least 3 hours (or overnight) until fully set.
- Lift out using parchment, slice into squares, and enjoy.
Notes
- Store in the refrigerator for up to 5 days.
- These bars can be frozen for up to 2 months.
- Top with additional sprinkles before serving for a festive touch.
