- 500 grams All-purpose flour
- 50 grams Sugar
- 10 grams Salt
- 20 grams Fresh yeast
- 2 large Eggs
- 100 grams Unsalted butter (softened)
- 250 ml Whole milk
- 50 grams Butter
- 1 Vanilla pod (scraped)
- 4 large Egg yolks
- 100 grams Sugar
- 30 grams Cornstarch
- 30 grams All-purpose flour
- 150 grams Mini chocolate chips
- 20 grams Sugar (for syrup)
- 50 ml Water
- 1 large Egg + yolk (beaten)
Instructions
- In a stand mixer, combine all-purpose flour, sugar, salt, and crumbled fresh yeast. Add the beaten eggs and knead until the mixture forms a smooth dough, then incorporate the softened butter until well-blended.
- Cover the dough and let it rise in a warm place for 2 hours, or until it has doubled in size.
- In a saucepan, heat the whole milk with a teaspoon of butter and the scraped insides of the vanilla pod. While it’s warming, whisk together egg yolks, sugar, cornstarch, and flour. Combine this mixture with the warm milk until it thickens, then chill it in the fridge.
- On a floured surface, roll out the dough. Spread the cooled custard over the dough and sprinkle mini chocolate chips. Fold the dough, cut it into rectangles, and let them rise again for about 30 minutes.
- Preheat your oven to 350°F (180°C). Brush the risen brioches with the beaten egg mixture and bake for 10-12 minutes, or until they’re golden brown.
