- 2 cups cooked chicken, shredded
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 packet taco seasoning
- 1 cup salsa
- 8 corn tortillas, cut into strips
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 cup sour cream (optional, for serving)
- Chopped green onions (for garnish)
- Fresh cilantro (for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the shredded chicken, black beans, corn, taco seasoning, and salsa. Mix until well combined.
- In a greased 9×13 inch baking dish, place half of the tortilla strips at the bottom.
- Spread half of the chicken mixture over the tortilla strips.
- Sprinkle one cup of shredded cheese over the chicken mixture.
- Repeat the process with the remaining tortilla strips, chicken mixture, and finish with the remaining cheese on top.
- Place the casserole in the preheated oven and bake for 30-35 minutes, or until the cheese is bubbly and golden.
- Remove from the oven and let it cool for about 5-10 minutes before serving. This allows it to set.
- Top with chopped green onions and cilantro for added flavor.
