Chicken Taco Casserole: An Incredible Ultimate Recipe for Everyone


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 packet taco seasoning
  • 1 cup salsa
  • 8 corn tortillas, cut into strips
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup sour cream (optional, for serving)
  • Chopped green onions (for garnish)
  • Fresh cilantro (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the shredded chicken, black beans, corn, taco seasoning, and salsa. Mix until well combined.
  3. In a greased 9×13 inch baking dish, place half of the tortilla strips at the bottom.
  4. Spread half of the chicken mixture over the tortilla strips.
  5. Sprinkle one cup of shredded cheese over the chicken mixture.
  6. Repeat the process with the remaining tortilla strips, chicken mixture, and finish with the remaining cheese on top.
  7. Place the casserole in the preheated oven and bake for 30-35 minutes, or until the cheese is bubbly and golden.
  8. Remove from the oven and let it cool for about 5-10 minutes before serving. This allows it to set.
  9. Top with chopped green onions and cilantro for added flavor.
