Instructions
- Season the chicken thighs generously with salt and pepper.
- In a large skillet over medium-high heat, add the olive oil.
- Once the oil is hot, add the chicken thighs, skin side down. Sear for about 5-7 minutes or until golden brown, then flip and cook for another 5-7 minutes. Remove chicken and set aside.
- In the same skillet, add the sliced onion and cook until soft, about 3-4 minutes.
- Add the garlic, red, and green bell peppers, cooking until tender.
- Stir in the crushed red pepper flakes, olives, oregano, and parsley.
- Pour in the white wine and use a wooden spoon to scrape any browned bits from the bottom of the pan. Let it simmer for 2-3 minutes.
- Pour in the chicken broth and bring to a simmer.
- Add the seared chicken thighs back into the skillet, ensuring they’re submerged in the sauce.
- Lower the heat and cover, letting the dish simmer for about 30 minutes until the chicken is fully cooked and tender.
- If desired, remove the lid and let the sauce thicken for an additional 5-10 minutes.
- Garnish with fresh parsley and lemon wedges as desired.
