Instructions

  1. Season the chicken thighs generously with salt and pepper.
  2. In a large skillet over medium-high heat, add the olive oil.
  3. Once the oil is hot, add the chicken thighs, skin side down. Sear for about 5-7 minutes or until golden brown, then flip and cook for another 5-7 minutes. Remove chicken and set aside.
  4. In the same skillet, add the sliced onion and cook until soft, about 3-4 minutes.
  5. Add the garlic, red, and green bell peppers, cooking until tender.
  6. Stir in the crushed red pepper flakes, olives, oregano, and parsley.
  7. Pour in the white wine and use a wooden spoon to scrape any browned bits from the bottom of the pan. Let it simmer for 2-3 minutes.
  8. Pour in the chicken broth and bring to a simmer.
  9. Add the seared chicken thighs back into the skillet, ensuring they’re submerged in the sauce.
  10. Lower the heat and cover, letting the dish simmer for about 30 minutes until the chicken is fully cooked and tender.
  11. If desired, remove the lid and let the sauce thicken for an additional 5-10 minutes.
  12. Garnish with fresh parsley and lemon wedges as desired.
