Cheesy Chicken & Broccoli Baked Potato Casserole is a delicious and filling dish that combines tender baked potatoes with shredded chicken, steamed broccoli, and melted cheese.

- 4 large baking potatoes
- 2 cups cooked chicken, shredded
- 2 cups broccoli florets, steamed
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1 cup chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- 1 cup breadcrumbs (optional, for topping)
- 2 tablespoons olive oil (optional, for breadcrumbs)
Instructions
- Preheat your oven to 375°F (190°C).
- Wash and pierce the baking potatoes with a fork. Bake them directly on the oven rack for about 45-60 minutes or until tender.
- While the potatoes are baking, cook your chicken if not already done. Season with salt, pepper, garlic powder, and onion powder. Steam the broccoli until vibrant green and slightly tender.
- In a large mixing bowl, combine the shredded chicken, steamed broccoli, sour cream, chicken broth, salt, black pepper, and paprika. Stir until everything is well mixed.
- Once the potatoes are done, let them cool slightly. Cut each potato in half lengthwise and scoop out some of the flesh, leaving a thin layer to maintain their shape.
- Add the scooped potato flesh to the chicken and broccoli mixture. Mix well to incorporate the potato.
- Spoon the chicken and broccoli filling back into each potato half, packing it generously.
- Sprinkle the shredded cheddar cheese on top of each filled potato.
- If using breadcrumbs, mix them with olive oil in a small bowl. Sprinkle the mixture over the cheese on each potato.
- Place the filled potatoes on a baking sheet and return them to the oven. Bake for an additional 20-25 minutes until the cheese is melted and bubbly.
- Once done, remove from the oven. Allow to cool slightly before serving.
