Description

Cheesy Chicken & Broccoli Baked Potato Casserole is a delicious and filling dish that combines tender baked potatoes with shredded chicken, steamed broccoli, and melted cheese.


Ingredients

  • 4 large baking potatoes
  • 2 cups cooked chicken, shredded
  • 2 cups broccoli florets, steamed
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 1 cup breadcrumbs (optional, for topping)
  • 2 tablespoons olive oil (optional, for breadcrumbs)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash and pierce the baking potatoes with a fork. Bake them directly on the oven rack for about 45-60 minutes or until tender.
  3. While the potatoes are baking, cook your chicken if not already done. Season with salt, pepper, garlic powder, and onion powder. Steam the broccoli until vibrant green and slightly tender.
  4. In a large mixing bowl, combine the shredded chicken, steamed broccoli, sour cream, chicken broth, salt, black pepper, and paprika. Stir until everything is well mixed.
  5. Once the potatoes are done, let them cool slightly. Cut each potato in half lengthwise and scoop out some of the flesh, leaving a thin layer to maintain their shape.
  6. Add the scooped potato flesh to the chicken and broccoli mixture. Mix well to incorporate the potato.
  7. Spoon the chicken and broccoli filling back into each potato half, packing it generously.
  8. Sprinkle the shredded cheddar cheese on top of each filled potato.
  9. If using breadcrumbs, mix them with olive oil in a small bowl. Sprinkle the mixture over the cheese on each potato.
  10. Place the filled potatoes on a baking sheet and return them to the oven. Bake for an additional 20-25 minutes until the cheese is melted and bubbly.
  11. Once done, remove from the oven. Allow to cool slightly before serving.
