Cheesy Beef Enchilada Tortellini: An Amazing Ultimate Recipe

- 1 pound ground beef
- 1 package (9 ounces) cheese tortellini
- 1 can (10 ounces) enchilada sauce
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 teaspoon taco seasoning
- 1/2 cup diced onions
- 1/2 cup diced bell peppers
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- In a large pot, bring salted water to a boil. Add the cheese tortellini and cook according to package instructions until al dente. Drain and set aside.
- In a skillet, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula. Drain excess fat if necessary.
- Stir in the diced onions and bell peppers. Cook for about 3-4 minutes until they soften.
- Sprinkle in the taco seasoning, salt, and pepper. Mix well to combine all the flavors.
- Add the cooked tortellini to the beef mixture. Pour in the enchilada sauce and stir until everything is well coated.
- Remove the skillet from heat and add half of the cheddar and Monterey Jack cheeses. Stir until the cheese melts and combines with the mixture.
- Preheat your oven to 350°F (175°C). Transfer the cheesy mixture to a greased 9×13-inch baking dish.
- Top with the remaining cheddar and Monterey Jack cheeses over the top of the mixture.
- Place the baking dish in the preheated oven and bake for 15-20 minutes until the cheese is bubbly and golden.
- Remove from the oven and let it cool for a few minutes. Garnish with fresh cilantro if desired before serving.
