Cheesy Beef Enchilada Tortellini: An Amazing Ultimate Recipe


Ingredients

  • 1 pound ground beef
  • 1 package (9 ounces) cheese tortellini
  • 1 can (10 ounces) enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 teaspoon taco seasoning
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a large pot, bring salted water to a boil. Add the cheese tortellini and cook according to package instructions until al dente. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula. Drain excess fat if necessary.
  3. Stir in the diced onions and bell peppers. Cook for about 3-4 minutes until they soften.
  4. Sprinkle in the taco seasoning, salt, and pepper. Mix well to combine all the flavors.
  5. Add the cooked tortellini to the beef mixture. Pour in the enchilada sauce and stir until everything is well coated.
  6. Remove the skillet from heat and add half of the cheddar and Monterey Jack cheeses. Stir until the cheese melts and combines with the mixture.
  7. Preheat your oven to 350°F (175°C). Transfer the cheesy mixture to a greased 9×13-inch baking dish.
  8. Top with the remaining cheddar and Monterey Jack cheeses over the top of the mixture.
  9. Place the baking dish in the preheated oven and bake for 15-20 minutes until the cheese is bubbly and golden.
  10. Remove from the oven and let it cool for a few minutes. Garnish with fresh cilantro if desired before serving.
