Instructions

  1. Begin by preheating your oven to 350°F (175°C). Grease a 9-inch round baking dish.
  2. In a large bowl, combine the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Mix well and set aside.
  3. In another bowl, mix the grated carrots with the granulated sugar, allowing it to sit for about 10 minutes.
  4. In a separate bowl, whisk together the vegetable oil, eggs, and vanilla extract until well combined.
  5. Gradually add the wet mixture to the carrot mixture, stirring gently to combine.
  6. Slowly add the dry ingredients to the wet ingredients, mixing until just combined.
