- 1 lb beef sirloin, cut into chunks
- 1 lb ground beef
- 4 strips bacon
- 4 cups beef broth
- 2 tbsp chili powder
- 1 tbsp cumin
- 1 tbsp garlic powder
- 1 tbsp onion powder
- Salt to taste
Instructions
- Preheat a medium Dutch oven or pot over medium-high heat with your choice of tallow or bacon grease.
- Cook the bacon until crispy; reserve some for topping. Set aside ¼ cup of bacon fat.
- Sear the sirloin chunks for 2-3 minutes per side until browned.
- Add the ground beef and optional spices; cook while breaking apart until fully browned.
- Return sirloin to the pot and pour in the beef broth, bringing it to a boil before reducing to a simmer.
- Allow everything to simmer uncovered for about 30 minutes.
- Crumble bacon into the chili, add salt to taste, and serve hot with optional toppings.
