Ingredients

  • 1 lb beef sirloin, cut into chunks
  • 1 lb ground beef
  • 4 strips bacon
  • 4 cups beef broth
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • Salt to taste

Instructions

  1. Preheat a medium Dutch oven or pot over medium-high heat with your choice of tallow or bacon grease.
  2. Cook the bacon until crispy; reserve some for topping. Set aside ¼ cup of bacon fat.
  3. Sear the sirloin chunks for 2-3 minutes per side until browned.
  4. Add the ground beef and optional spices; cook while breaking apart until fully browned.
  5. Return sirloin to the pot and pour in the beef broth, bringing it to a boil before reducing to a simmer.
  6. Allow everything to simmer uncovered for about 30 minutes.
  7. Crumble bacon into the chili, add salt to taste, and serve hot with optional toppings.
