- 3 cups low-sodium chicken broth
- 1 Tbsp. olive oil
- 2 strips thick-cut bacon
- 1/2 small shallot
- 2 cloves garlic
- 1 cup arborio rice
- 1/4 cup dry white wine
- 4 Tbsp. finely chopped caramelized onions
- 1/3 cup parmesan-reggiano
- 1 Tbsp. unsalted butter

- to taste finely chopped chives
Instructions
- Warm the Broth: Set a medium saucepan over medium-low heat and pour in the chicken broth. Allow it to come to a gentle simmer and keep it warm until it’s ready to use.
- Cook the Bacon: Heat a large sauté pan over medium heat. Add olive oil and bacon, cooking until crispy, about 10 minutes. Once done, remove the bacon and let it drain on paper towels.
- Sauté Shallots: Turn the heat down to medium-low. Add the shallots along with a pinch of salt, cooking them for 1-2 minutes until they soften and turn a beautiful translucent color.
- Add Garlic: Toss in the garlic and cook for about a minute, until fragrant and lightly golden.
- Coat the Rice: Add the arborio rice to the pan, stirring to coat it in the oil, garlic, and shallots. Cook for 2-3 minutes, watching for slight transparency with a little white dot remaining in the center of each grain.
- Incorporate Wine: Pour in the dry white wine, allowing it to be absorbed by the rice, which should take about 2-3 minutes.
- Add Broth Gradually: Begin adding the warm chicken broth one ladle at a time. Wait until each ladle is nearly absorbed before adding the next, which should take about 20-25 minutes.
- Stir in Special Ingredients: When the rice has just the slightest bite, stir in the caramelized onions and crispy bacon. Remove the pan from the heat.
- Finish with Cheese and Butter: Stir in the parmesan-reggiano and unsalted butter until melted and creamy. Season with salt and pepper to taste.
- Garnish and Serve: Garnish with finely chopped chives right before serving. Serve hot.
