Ingredients

  • 2 tablespoons Cajun Seasoning
  • 12 ounces Rigatoni Pasta
  • 1 cup Heavy Cream
  • 1 cup Parmesan Cheese (Freshly Grated)
  • 2 cloves Garlic (Minced)
  • 2 tablespoons Butter
  • to taste Salt and Pepper
  • 1 cup Mozzarella or Fontina Cheese (Optional)
  • 2 tablespoons Olive Oil

Instructions

  1. Heat a large skillet over medium-high heat, adding olive oil and butter until they shimmer together.
  2. Season the steak tips generously with Cajun spice. Sear them in the skillet until browned on all sides, about 6-8 minutes. Remove and set aside.
  3. In a separate pot, bring salted water to a rolling boil and cook the rigatoni until al dente, about 9-11 minutes. Reserve ½ cup of pasta water before draining.
  4. In the same skillet, sauté minced garlic in remaining butter for about 1-2 minutes.
  5. Pour in heavy cream and bring to a gentle simmer. Gradually mix in grated Parmesan until it melts.
  6. Stir in additional cheese, season with salt, pepper, and more Cajun seasoning to taste.
  7. Toss the drained rigatoni in the sauce, adding reserved pasta water bit by bit.
  8. Gently fold in the seared steak tips and serve topped with extra Parmesan, cracked pepper, or hot sauce.
