- 2 tablespoons Cajun Seasoning
- 12 ounces Rigatoni Pasta
- 1 cup Heavy Cream
- 1 cup Parmesan Cheese (Freshly Grated)
- 2 cloves Garlic (Minced)
- 2 tablespoons Butter

- 1 cup Mozzarella or Fontina Cheese (Optional)
- 2 tablespoons Olive Oil
Instructions
- Heat a large skillet over medium-high heat, adding olive oil and butter until they shimmer together.
- Season the steak tips generously with Cajun spice. Sear them in the skillet until browned on all sides, about 6-8 minutes. Remove and set aside.
- In a separate pot, bring salted water to a rolling boil and cook the rigatoni until al dente, about 9-11 minutes. Reserve ½ cup of pasta water before draining.
- In the same skillet, sauté minced garlic in remaining butter for about 1-2 minutes.
- Pour in heavy cream and bring to a gentle simmer. Gradually mix in grated Parmesan until it melts.
- Stir in additional cheese, season with salt, pepper, and more Cajun seasoning to taste.
- Toss the drained rigatoni in the sauce, adding reserved pasta water bit by bit.
- Gently fold in the seared steak tips and serve topped with extra Parmesan, cracked pepper, or hot sauce.
