This Buffalo Chicken and Blue Cheese Slaw Burger is a flavorful and spicy twist on the classic chicken sandwich, combining tender buffalo chicken breasts with creamy mozzarella cheese and a tangy blue cheese slaw.

- 2–3 chicken breasts (1.5–2 pounds)
- 1 cup buffalo sauce (Sweet Baby Ray’s recommended)
- 6 slices mozzarella cheese
- 6 cups coleslaw (pre-made or homemade works great)
- 1 recipe blue cheese dressing
- 6 potato hamburger buns
Instructions
- Place the chicken breasts in a slow cooker or Instant Pot and pour the buffalo sauce over them to evenly coat. Cook the chicken until it’s tender and fully cooked through, approximately 2 hours in a slow cooker or 25-30 minutes under pressure in an Instant Pot.
- Once cooked, remove the chicken breasts and shred them using two forks. Return the shredded chicken to the buffalo sauce to keep it moist and flavorful.
- Place the shredded buffalo chicken on each potato bun base, then top with a slice of mozzarella cheese. You can briefly place the assembled burgers under a broiler or in a hot oven to gently melt the cheese.
- In a bowl, mix the coleslaw with the blue cheese dressing until well combined to create a creamy, tangy topping.
- Add a generous scoop of blue cheese slaw on top of the melted mozzarella and shredded buffalo chicken on each bun. Cover with the top bun and serve immediately for the best texture and flavor.
