Ingredients

- 3 slices of bread (white, whole wheat, or sourdough)
- 2 large eggs
- 4 slices of bacon
- 1 medium tomato, sliced
- 1 cup of lettuce (romaine or spinach)
- 2 tablespoons mayonnaise
- 1 tablespoon mustard (optional)
- Salt and pepper, to taste
- Butter or oil for cooking eggs
Instructions
- In a skillet over medium heat, cook the bacon until crispy. Transfer to a paper towel-lined plate to drain excess grease.
- In the same skillet, lightly toast the bread slices until golden brown on both sides. Remove and set aside.
- In a small bowl, whisk the eggs and season with salt and pepper. In the skillet, add a bit of butter or oil and scramble the eggs until fully cooked. Set aside.
- Start with one slice of toasted bread. Spread mayonnaise and mustard on top.
- Add a layer of bacon, followed by the scrambled eggs, tomato slices, and lettuce.
- Place a second slice of bread on top and repeat the layering process with more bacon, eggs, and vegetables.
- Top with the final slice of toasted bread.
- If desired, use toothpicks or skewers to hold the sandwich together. This will make it easier to slice and serve.
- Slice the sandwich in half diagonally for a beautiful presentation.
