Description

A quick and easy make-ahead breakfast casserole with sausage, hash browns, and cheese, perfect for busy mornings.


Ingredients

  • 1 pound Beef Sausage
  • 6 Eggs
  • 2 cups Milk
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1/2 package Frozen Hash Browns (15 oz)
  • 2 cups Shredded Cheddar Cheese

Instructions

  1. Cook the beef sausage in a large skillet over medium-high heat, breaking it up as it cooks. Drain off excess grease and set aside. Prepare the frozen hash browns, breaking them up if in a large block. About 7.5 ounces or 1 3/4 cups are needed.
  2. Grease a 9×13 inch baking dish. Spread the frozen hash browns evenly across the bottom. Scatter the cooked sausage over the hash browns. Sprinkle about half of the shredded cheddar cheese over the sausage and hash browns.
  3. In a large bowl, whisk together the 6 eggs, 2 cups of milk, 1 teaspoon of salt, and 1/2 teaspoon of pepper until well combined and uniform in color.
  4. Pour the egg and milk mixture evenly over the ingredients in the baking dish, ensuring it saturates everything. You may need to tilt the dish or gently push down ingredients to help them absorb the liquid.
  5. Preheat oven to 375 degrees Fahrenheit (190 degrees Celsius). Bake the casserole for 45 minutes.
  6. Carefully remove the casserole from the oven. Sprinkle the remaining 1 cup of shredded cheddar cheese over the top. Return to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly, and the center is set. Let rest for 5-10 minutes before serving.
