Delicious Blueberry Mousse: A Dairy-Free Delight!

- 1 cup Silk dairy-free heavy whipping cream (chilled)
- 1/4 teaspoon cream of tartar
- 1/2 cup powdered sugar
- a dash salt
- 1 teaspoon vanilla extract
- 2–3 ounces freeze-dried blueberry powder (grind freeze-dried blueberries)
Instructions
- Grind the freeze-dried blueberries using a small blender until they form a fine powder. Set this vibrant blueberry powder aside.
- Whip the chilled Silk heavy whipping cream along with the cream of tartar in a large bowl until fluffy and holds sturdy peaks.
- Mix in the dash of salt, powdered sugar, and vanilla extract.
- Combine the blueberry powder with the whipped cream and gently fold until color is a lovely lavender.
- Scoop or pipe the mousse into serving cups. Cover and chill for several hours or overnight.
- Store any leftovers in the fridge for up to 4 days.
