Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a large bowl, combine the cubed bread and sliced bananas. Gently toss to mix.
- In another bowl, whisk together the eggs, heavy cream, whole milk, granulated sugar, vanilla extract, cinnamon, and salt until well combined.
- Pour the custard mixture over the bread and bananas, ensuring everything is well coated. Let it sit for about 15 minutes.
- Pour the mixture into the prepared baking dish, spreading it evenly.
- In a small saucepan, melt the butter over medium heat. Add the brown sugar, dark rum, and nutmeg (if using). Stir until the sugar dissolves and the mixture is smooth.
- Pour the rum sauce evenly over the bread pudding mixture.
- Place the baking dish in the preheated oven and bake for 45-50 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Remove from the oven and let it cool for about 10-15 minutes before serving.
- Serve warm with whipped cream or a scoop of vanilla ice cream, if desired.
