- 2 pounds chicken (cut into pieces)
- 2 tablespoons Jamaican curry powder
- 1 teaspoon allspice (pimento)
- 1 large onion (sliced)
- 4 cloves garlic (minced)
- 1-inch piece ginger (grated)
- 2–3 Scotch bonnet peppers (whole, for heat)
- 2 medium potatoes (peeled and diced)
- 2 carrots (sliced)
- 1 bell pepper (sliced)
- 1 teaspoon salt (to taste)
- 1/2 teaspoon black pepper
- 4 cups water or chicken broth
- 2 tablespoons vegetable oil
- Fresh thyme (a few sprigs)
- 1 lime (juiced)
Instructions
- In a bowl, combine chicken pieces with lime juice, Jamaican curry powder, allspice, salt, and black pepper. Allow to marinate for at least 30 minutes.
- In a large pot or Dutch oven, heat the vegetable oil over medium heat.
- Add the sliced onions and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and grated ginger. Cook for another 2 minutes until fragrant.
- Add the marinated chicken to the pot. Cook for about 5-7 minutes, turning occasionally until browned on all sides.
- Incorporate the diced potatoes, sliced carrots, and bell pepper into the pot.
- Add the water or chicken broth, ensuring the chicken and vegetables are fully submerged.
- Add the whole Scotch bonnet peppers for heat but do not cut them; this will infuse flavor without overly spicing the dish.
- Toss in the fresh thyme sprigs for an aromatic touch.
- Bring the pot to a boil, then reduce the heat to low. Cover and let simmer for about 40-50 minutes, or until the chicken is tender and the flavors meld together.
- Taste and adjust seasoning if necessary, adding more salt or pepper to your liking.
- Carefully remove the Scotch bonnet peppers before serving to control the spice level.
