  • 2 tablespoons Jamaican curry powder
  • 1 teaspoon allspice (pimento)
  • 1 large onion (sliced)
  • 4 cloves garlic (minced)
  • 1-inch piece ginger (grated)
  • 23 Scotch bonnet peppers (whole, for heat)
  • 2 medium potatoes (peeled and diced)
  • 2 carrots (sliced)
  • 1 bell pepper (sliced)
  • 1 teaspoon salt (to taste)
  • 1/2 teaspoon black pepper
  • 4 cups water or chicken broth
  • 2 tablespoons vegetable oil
  • Fresh thyme (a few sprigs)
  • 1 lime (juiced)

Instructions

  1. In a bowl, combine chicken pieces with lime juice, Jamaican curry powder, allspice, salt, and black pepper. Allow to marinate for at least 30 minutes.
  2. In a large pot or Dutch oven, heat the vegetable oil over medium heat.
  3. Add the sliced onions and sauté until translucent, about 5 minutes.
  4. Stir in the minced garlic and grated ginger. Cook for another 2 minutes until fragrant.
  5. Add the marinated chicken to the pot. Cook for about 5-7 minutes, turning occasionally until browned on all sides.
  6. Incorporate the diced potatoes, sliced carrots, and bell pepper into the pot.
  7. Add the water or chicken broth, ensuring the chicken and vegetables are fully submerged.
  8. Add the whole Scotch bonnet peppers for heat but do not cut them; this will infuse flavor without overly spicing the dish.
  9. Toss in the fresh thyme sprigs for an aromatic touch.
  10. Bring the pot to a boil, then reduce the heat to low. Cover and let simmer for about 40-50 minutes, or until the chicken is tender and the flavors meld together.
