Ingredients
Scale
- 1 lb baby potatoes, halved
- 1 lb sausage (your choice: kielbasa, Italian, or breakfast links)
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried herbs (oregano or thyme)
- Salt and pepper to taste
- Fresh parsley or chives for garnish
- Squeeze of lemon (optional)
Instructions
- Wash and halve the baby potatoes; slice sausages into 1/2-inch coins.
- In a mixing bowl, combine potatoes and sausage with oil, garlic powder, dried herbs, salt, and pepper; toss to coat.
- Preheat the air fryer to 400°F (200°C) for 2-3 minutes.
- Place the mixture in a single layer in the basket; air fry at 400°F for 15-20 minutes, shaking halfway through.
- Check for doneness; potatoes should be tender, and sausage should reach an internal temperature of 160°F.
- Transfer to a serving dish, garnish with parsley or chives, and add a squeeze of lemon if desired.
Notes
For added flavor, consider adding bell peppers or onions halfway through cooking. This dish is versatile; feel free to swap in sweet potatoes or different types of sausage as desired.
