Quick, budget-friendly air fryer loaded potatoes with crispy skins and fluffy centers, topped with cheese, bacon, and green onions.

- 4 medium Russet or Yukon Gold potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup crumbled bacon
- 1/4 cup sour cream
- 2 tablespoons chopped green onions
Instructions
- Wash and scrub the potatoes thoroughly. Pat them dry with a paper towel.
- Prick each potato several times with a fork.
- In a small bowl, drizzle the olive oil over the potatoes and sprinkle with salt and pepper.
- Place the potatoes in the air fryer basket and cook at 400°F (200°C) for 40–50 minutes.
- While the potatoes are cooking, prepare your toppings: cook bacon until crispy, shred cheese, and chop green onions.
- Carefully remove the potatoes from the air fryer and slice each potato lengthwise. Fluff the inside with a fork and sprinkle with shredded cheese.
- Return the potatoes to the air fryer for 1–2 minutes to melt the cheese.
- Remove the loaded potatoes and top them with crumbled bacon, sour cream, and chopped green onions. Serve immediately.
Notes
For extra crispiness, ensure potatoes are completely dry before oiling. Avoid overcrowding the air fryer for best results.
