- 1 lb chicken breast, cut into 1-inch cubes
- 1/4 cup olive oil
- 1/4 cup soy sauce
- 2 tbsp honey
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1/2 tsp red pepper flakes (optional)
- 1/2 tsp black pepper
- 1 tsp salt
- 1 bell pepper, cut into 1-inch pieces
- 1 red onion, cut into 1-inch pieces
- 1 zucchini, cut into 1-inch pieces
- 1 yellow squash, cut into 1-inch pieces
- Sesame seeds for garnish
- Chopped green onions for garnish
Instructions
- In a medium bowl, whisk together olive oil, soy sauce, honey, rice vinegar, sesame oil, minced garlic, grated ginger, red pepper flakes, black pepper, and salt to create the marinade.
- Add cubed chicken to the marinade, toss to coat, and marinate in the refrigerator for at least 30 minutes or up to 4 hours.
- Wash and cut the vegetables into roughly 1-inch pieces.
- Thread the chicken and vegetables onto soaked wooden skewers, alternating between the chicken and veggies.
- Preheat the air fryer to 400°F (200°C).
- Lightly grease the air fryer basket and place skewers in a single layer.
- Cook skewers for 12-15 minutes, flipping halfway through, until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are tender-crisp.
- Transfer the cooked skewers to a serving platter, garnish with sesame seeds and chopped green onions, if desired, and serve immediately.
Notes
For extra crispness, brush the skewers with oil before air frying. Adjust cooking times based on the thickness of the chicken and vegetables.
